Pumpkin Dinner...

We had Pumpkin for dinner last night. Well sort of....

I made this in the Wilton Jack O Lantern Cake Pan, isn't it cute??? I love dinners like this, not only is it pretty easy to clean up (basically only 1 pan) it's fun too!!

Here's what you'll need:
4 boxes corn bread mix - and ingredients per box to make the mix
1 1/2 pds. ground beef
16oz jar of salsa (I had an open jar in the fridge too, so I used about 1 1/2 jars)
7 oz can of corn (drained)
peppers and onions chopped
2 cups of shredded cheese

Spray non stick spray in cake pan (Wilton Jack O Lantern Cake Pan). Mix 2 boxes of corn bread mix and fill bottom of cake pan.

Brown ground beef and drain. Add ground beef, salsa, corn, peppers and onions back in pan, stir and heat for 5 mins. Remove from heat and stir in cheese.

Spoon mixture into cake pan leaving space along sides of pan. Mix remaining two boxes of cornbread. Add cornbread mix around sides and on top of cake pan. Bake 20-25 mins. at 400 degrees. Remove and let cool for 10mins. Flip onto large serving platter. (Sorry I didn't have a Halloween platter! As Hubby pointed out I used our July 4th platter)

Decorate!! I used red and green peppers to make the face.

Serve with sour cream. YUMMY!!

This is one of those great recipes that you can change up and use whatever your family eats!!
